Blood Building Burdock Root Pickles

Ingredients:

  • 8 oz peeled burdock root cut on long matchstick shape and steamed for 10 minutes
  • 1 cup water
  • 1/2 cup rice vinegar
  • 1/2 tsp salt
  • 3 cloves garlic, chopped
  • 1 tsp fresh ginger, chopped
  • 1/2 tsp whole mustard seed

Directions: Steam burdock. While steaming, mix all other ingredients and bring to a gentle boil. Place burdock root into a sterile mason jar and cover with vinegar mixture.

Seal with 20 minute water bath in a canner or keep in the fridge for up to a month.

 

About Burdock:

Budock is a plant member of the Asteraceae family that has some amazing actions. It will help to promote beautiful clear skin, build iron levels, cleanse and protect the liver and lymph, decrease inflammation, and increase immune function. The root is the part of the plant that is used in medicine most frequently. It's great for conditions like eczema, iron-deficiency anemia, seborrheic dermatitis, acne, boils, and autoimmune joint and connective tissue diseases, among other things.
