Chia Seed Pudding is so quick and easy! I love to make it on the fly for breakfast, a snack, or even desert! Chia seeds are full of healthy omega 3 fatty acids, antioxidants, minerals and more! For a good top 10 of why you should eat chia seeds, click here :) Heard a lot of talk all of your life about eating too many saturated fats? While this information is still true, the more appropriate focus for health now seems to be on Omega 6: Omega 3 ratio. This article sums that up pretty well- The importance of the ratio of omega-6/omega-3 essential fatty acids. Basically, our Omega 6: Omega 3 Ratio is too high in our western diet, and it is leading to disease.
So, here's a great way to get your omega 3s and lots of other great things too! Plus, it's delicious :)
Chia Seed Pudding Recipe:
1/4 c Chia Seeds
1 c alternative milk- I like homemade hemp milk- which I will do put the recipe up for soon- so easy! but you can use almond milk, soy milk, coconut milk too!
1/4t pure vanilla extract
Splash of maple syrup or honey.
Just put all of the ingredients together in a container with a lid (or a jar with a lid), shake it up, and let it sit! The chia seeds will soak up the liquid and it will be kind of like a tapioca pudding. No cooking required.
I love to put any kind of fruit on or in this. Cocoa powder, coconut flakes, and nuts are also good- just depends on what kind of pudding you're looking for.
