Raw Granola Bars

I made this recipe up as I was doing a water-only fast, believe it or not…and I'm pretty sure they were the first thing I had a little bite of when I was done…I should water fast and cook more often! They're delicious! I'm not a big measurer, and I love the variance I get just throwing the following together without too much precision :)

In a bowl, I combine these: 

  • Ground flax
  • Chia seeds
  • Coconut flakes
  • Dried cranberries
  • A little bit of protein powder- I usually use a mix of hemp, pea, and rice
  • Maca powder
  • A dash of salt
  • Steel cut oats
  • Sunflower seeds

 

In a food processor pulse until coarsely ground. I start with the dates by themselves because they take a bit longer to make small bites

  • Dates
  • Walnuts
  • Almonds (slivered)
  • Cashews (I used either roasted or raw)
  • Pecans

 

When pulsed, add to bowl mixture

On low heat, warm peanut butter, oil of choice (I've used extra virgin olive and coconut oil), and maple syrup. Mix together. Add to dry mixture- just add enough to get the consistency you want. 

Mix together and press into a glass pan. I used a 8x8 pan. I just even it out and press it down with a spoon until compact. Then I put saran wrap on it and put it in the freezer. They're really good when they come right out of the freezer :) No baking necessary - Enjoy!
